Bacon, cheese, potatoes, creamy mayonnaise - does it get any better than this? Serve up this hearty potato salad at your next picnic and watch it disappear!
Boil the potatoes in salted (1 teaspoon) water for approximately 20 minutes until tender.
- Meanwhile, grate the cheddar cheese.
In a skillet, cook the bacon according to package directions. Once it's cooled, chop the bacon.
In a large bowl, mix together the mayonnaise, sour cream, salt, and pepper. Add the potatoes and toss to coat.
Add approximately ¾ of the chives, bacon, and grated cheese.
Mix everything together.
Top with the remaining chives, bacon, and cheese. Refrigerate for a couple of hours, then serve.
