Loaded Potato Salad with Bacon

Bacon, cheese, potatoes, creamy mayonnaise - does it get any better than this? Serve up this hearty potato salad at your next picnic and watch it disappear!


Select ingredients:


  1. Boil the potatoes in salted (1 teaspoon) water for approximately 20 minutes until tender.
  2. Meanwhile, grate the cheddar cheese.
  3. In a skillet, cook the bacon according to package directions. Once it'™s cooled, chop the bacon.
  4. In a large bowl, mix together the mayonnaise, sour cream, salt, and pepper. Add the potatoes and toss to coat.
  5. Add approximately ¾ of the chives, bacon, and grated cheese.
  6. Mix everything together.
  7. Top with the remaining chives, bacon, and cheese. Refrigerate for a couple of hours, then serve.
