- In a small bowl, toss together the lobster, lemon juice, mayonnaise, and Dijon mustard. Cover with plastic wrap and set in the refrigerator to let the flavors marinate while you prep the sandwiches.
- Toast the brioche slices. Place a piece of lettuce on a piece of toast and then slices of tomatoes. Add the lobster and bacon pieces. Top with another toasted brioche slice and enjoy immediately.
