Lobster Noodle Casserole

This more sophisticated version of a tuna casserole is perfect for your Valentine's Day meal.

  1. In a large pot, boil water with a teaspoon of salt. Add the noodles and cook for about 10 minutes.
  2. While the noodles are cooking, prepare the cream sauce. In a large skillet, over medium heat, melt the butter and cook the shallots until translucent. Add the flour and brown it. Stir around with a wooden spoon. Gently whisk in the milk and combine. Add the seasonings. Let thicken only slightly. Remove from the heat and add the cheese.
  3. Drain the pasta and mix together with the cheese sauce mixture. Add the lobster meat. Butter the bottom and sides of a casserole dish. Pour the lobster noodle mixture into the casserole dish. Sprinkle the top with Ritz cracker crumbs. Bake in a preheated 375 degree F oven for 10-15 minutes. Or until the cracker crumbs are slightly browned and the mixture is bubbling. Serve immediately.
