Lovely Lemon Curd

Makes 2 cups
Use this lemon curd as a delicious filling for cupcakes or shortbread cookies, or pour it over berries or scones. You can also spread it on muffins, French toast, or biscuits.



  1. In a medium to large saucepan, place the butter, sugar, lemon juice, lemon zest and eggs. Cook over medium-low heat for approximately 5 minutes, stirring constantly—do not let it boil or get too hot. Lower the heat a bit if needed, but continue to stir the mixture until it thickens and reads about 170 degrees on a thermometer, approximately 5 to 8 minutes more.
  2. Set a strainer over a bowl and slowly pour the mixture through the strainer and into the bowl. Place plastic wrap on the surface of the curd to prevent it from forming a skin while it cools.
