Craving a Mexican-style meal for lunch or dinner? Give this Cauliflower Rice Burrito Bowl recipe a try for a healthier and low-carb twist on the traditional rice version! Not only is this dish packed with all the flavors you adore, but it also helps you choose a better-for-you meal to make for your family (and stick to your New Year’s resolution). Talk about a tasty win-win! And speaking of wins, if you want to make this recipe even easier, use premade, frozen cauliflower rice instead.


Select ingredients:


  1. Place the cauliflower in a food processor or blender and pulse until it resembles rice. Transfer cauliflower rice to a bowl. Add water and cover with plastic wrap. Microwave on high power for 5-7 minutes. Let cool.
  2. Whisk together brown sugar, salt, pepper, cumin, chili powder and cayenne pepper. Heat the oil in a large skillet over high heat. Add the onion and bell pepper. Sauté for 7-10 minutes, or until the vegetables begin to soften and char around the edges. Reduce the heat to medium-low and add seasoning mix and lime juice. Season, to taste, with additional salt and pepper.
  3. To serve, divide cauliflower rice between four bowls. Top with vegetables, black beans, cheese, salsa and guacamole. Garnish with lime wedges and cilantro leaves.
