- Place the cauliflower in a food processor or blender and pulse until it resembles rice. Transfer cauliflower rice to a bowl. Add water and cover with plastic wrap. Microwave on high power for 5-7 minutes. Let cool.
- Whisk together brown sugar, salt, pepper, cumin, chili powder and cayenne pepper. Heat the oil in a large skillet over high heat. Add the onion and bell pepper. Sauté for 7-10 minutes, or until the vegetables begin to soften and char around the edges. Reduce the heat to medium-low and add seasoning mix and lime juice. Season, to taste, with additional salt and pepper.
- To serve, divide cauliflower rice between four bowls. Top with vegetables, black beans, cheese, salsa and guacamole. Garnish with lime wedges and cilantro leaves.
