- Preheat oven to 400 degrees. Cook pasta until al dente. Grease baking cup sheets with spray or a little melted butter.
- In a medium-sized pot, stir together butter and flour over medium heat until butter is melted and smooth. Add milk and raise the heat just below a boil. Add 1 cup of the cheese, cream cheese, salt and pepper. Mix until smooth. Turn down the heat to low. In a large bowl, stir pasta, cheese sauce, and egg until well mixed and pasta is covered in cheese.
- Spoon 2-3 tablespoon fulls of mac and cheese into mini muffin tins and sprinkle a small pinch of any leftover cheese cheese. Bake for 15 minutes or until golden brown. Allow to cool 5 minutes before removing the bites from the baking pans.
