Macadamia nuts combine with the sweet flavors of ginger and brown sugar to turn this fast and easy recipe with mahi-mahi fillets into a festive occasion every time!

- Prepare the breading by combining the bread crumbs, nuts, salt and pepper in a food processor. Pulse the mixture until the nuts are coarse but not mushy. Place in a shallow bowl.

Whisk the egg and water together and place in a second bowl. Put the flour by itself in a third bowl. Dip all sides of the fillets in flour.

Next coat them with the egg mixture, followed by the nut mixture.

In a large skillet, heat the oil on medium and cook the fillets until they are golden brown, about 3-4 minutes on all sides.
- Prepare the sauce by combining the brown sugar, soy sauce and ginger in a microwave-safe bowl. Place the bowl uncovered in the microwave and cook on high for 30-60 seconds or until the brown sugar has dissolved.
- Spoon sauce over the fish.
