Mama's Mighty Meatballs

These flavorful meatballs are full of veggies and tons of flavor. A great way to sneak in those veggies for your kids to enjoy. Made with lean ground turkey so you can't feel guilty about eating 6 or 12!



  1. Start by chopping up all your veggies. Chop The Spinach very fine & grate the Carrots. Mince the onion and Garlic.
  2. Next put you Ground Turkey into a large bowl along with your vegetables, breadcrumbs, egg & seasoning. Mix it all up with your clean hands. It's a little messy but hand work best when making meatballs.
  3. Once you have everything incorporated everything start making the meatballs with a measuring spoon. 1 tablespoon to be exact. Making the meatballs small helps them cook faster.
  4. Drizzle 2 tablespoons of olive oil into a pan and add your meatballs Let them cook for about 5-7 minutes until the are fully brown on one side. Then flip them over and let cook for 5 more minutes.
  5. After they have cooked on both sides add 1/2 a cup of Chicken Brothh and cook until the liquid has reduced. Give them a toss and add the rest of your Broth.
  6. Once the liquid has reduced again your meatballs are finished!!
  7. I like to serve them with a whole grain Pasta or Quinoa and some broccoli on the side. Or I just eat them right out of the pan. :) I hope you enjoy this healthy & delicious meal! It's one of my absolute favorites and so quick and easy to make. You can even have your kiddos help you add the ingredients. They'll most likely want to eat them after they've helped cook it.
