Manchego Cheese, Green Apple and Fresh Dill Salad

This impossibly fresh salad hits on every taste bud and is surprisingly filling. Plus, it makes a fast after school snack and is easy to throw together in a pinch. It also makes a tasty garnish for a turkey sandwich or even a plate of leftover roasted chicken.

- Sprinkle kosher salt for vinegar and olive oil mixture, plus sprinkle of kosher salt to taste after mixing. Thoroughly wash dill and apples.
- Mix vinegar, olive oil and half the salt in large bowl.
- Slice Manchego cheese in strips, almost as you would for slaw and place in large bowl. Finely chop dill. Slice apples- for home cooks who like the skin of a Granny Smith apple, include it, otherwise peel apple before slicing. Slice apple in half, core and continue slicing until apples are in strips similar to have youâve sliced the cheese.
- Mix everything together in bowl and serve immediately.
