Manchego Cheese, Green Apple and Fresh Dill Salad

This impossibly fresh salad hits on every taste bud and is surprisingly filling. Plus, it makes a fast after school snack and is easy to throw together in a pinch. It also makes a tasty garnish for a turkey sandwich or even a plate of leftover roasted chicken.


Select ingredients:


  1. Sprinkle kosher salt for vinegar and olive oil mixture, plus sprinkle of kosher salt to taste after mixing. Thoroughly wash dill and apples.
  2. Mix vinegar, olive oil and half the salt in large bowl.
  3. Slice Manchego cheese in strips, almost as you would for slaw and place in large bowl. Finely chop dill. Slice apples- for home cooks who like the skin of a Granny Smith apple, include it, otherwise peel apple before slicing. Slice apple in half, core and continue slicing until apples are in strips similar to have you’ve sliced the cheese.
  4. Mix everything together in bowl and serve immediately.
