Maple Bacon Pancake Bites

- Makes 64 pancake bites
Slightly crunchy on the outside, soft and fluffy on the inside, topped with the maple-flavored sweetness; these maple bacon pancake bites are perfection.

In a mixing bowl, mix together the Bisquick, salt, sugar, and baking powder.

Add in the vanilla, the eggs, and the milk and mix until combined.

Generously grease a mini muffin tin with butter and fill each cup approximately 2/3 full with batter.

Bake in a 400-degree oven for about 10 minutes.

In the bowl of a stand mixer, place the softened cream cheese, the powdered sugar, and the sea salt.

Add the maple syrup and beat until smooth.

Transfer the icing to a shallow bowl. Dip each pancake bite in the icing and set it on a plate.

Top with crumbled bacon (quickly, before the icing firms up). You can top with additional maple syrup if you wish.
