Maple Breakfast Muffins

Need a quick, on-the-go breakfast? Try these maple-coated muffins for a great way to start your day!



  1. In a mixing bowl, combine all dry ingredients (flour, sugar, baking powder, salt, cinnamon, and nutmeg). In a separate bowl, combine the eggs, vegetable oil, milk, and maple syrup. Add the wet ingredients to the dry ingredients and mix lightly; then fold in the apple and bacon.
  2. Lightly grease or spray a 12-cup muffin tin; fill each cup 2/3 full with batter.
  3. Bake in a 375-degree oven for 17 to 20 minutes.
  4. To prepare the glaze: In a medium saucepan, heat until the ingredients are combined and smooth, stirring constantly. Drizzle over the muffins. Sprinkle the tops with additional crumbled bacon if desired.
  5. Store leftover muffins in the refrigerator.
