- In a mixing bowl, combine all dry ingredients (flour, sugar, baking powder, salt, cinnamon, and nutmeg). In a separate bowl, combine the eggs, vegetable oil, milk, and maple syrup. Add the wet ingredients to the dry ingredients and mix lightly; then fold in the apple and bacon.
- Lightly grease or spray a 12-cup muffin tin; fill each cup 2/3 full with batter.
- Bake in a 375-degree oven for 17 to 20 minutes.
- To prepare the glaze: In a medium saucepan, heat until the ingredients are combined and smooth, stirring constantly. Drizzle over the muffins. Sprinkle the tops with additional crumbled bacon if desired.
- Store leftover muffins in the refrigerator.
