- In a medium saucepan, combine the maple syrup, apple juice, pumpkin, brown sugar, vanilla, cinnamon, nutmeg, and ginger. Bring to a boil, stirring often.
- Reduce to a simmer and cook for approximately 25 to 30 minutes until thickened. Stir frequently as it cooks.
- Store in the refrigerator.
