Maple-Walnut Green Bean Salad

The garnish is an important element in this vegetable salad with the seductive nutty flavor of walnut oil. To toast walnuts, toss them in a dry skillet over medium heat for 4 minutes or until golden brown. Toasting enhances both the flavor and texture.

  1. Put the beans into a microwave-proof container and add 2 tablespoons water. Cover and microwave on HIGH for 3 minutes, or until crisp-tender. Drain and rinse with cool water.
  2. While the beans are cooking, whisk together the vinaigrette ingredients in a large bowl.
  3. Add the beans, bell pepper, and onion to the vinaigrette. Stir until evenly combined. Adjust the seasoning to taste.
  4. Garnish with the toasted walnuts.
