- Put the beans into a microwave-proof container and add 2 tablespoons water. Cover and microwave on HIGH for 3 minutes, or until crisp-tender. Drain and rinse with cool water.
- While the beans are cooking, whisk together the vinaigrette ingredients in a large bowl.
- Add the beans, bell pepper, and onion to the vinaigrette. Stir until evenly combined. Adjust the seasoning to taste.
Garnish with the toasted walnuts.
