Mashed Potato Tartlets

Mashed potatoes and bacon—the ingredients for the perfect appetizer! The creamy accompaniment of cheddar and sour cream make this creamily satisfying.

  1. To the mashed potatoes, add the bacon, onion, pepper, and garlic powder. Stir until thoroughly combined.
  2. Using a cookie cutter or the rim of a glass, cut 3-inch circles in the dough. Place each dough circle in the cup of a mini muffin tin.
  3. Into each muffin cup, add 1 rounded teaspoon of the mashed potato mixture. Top with 1 teaspoon of shredded cheese, and then fold the piecrust into pleats around the edge.
  4. In a preheated 375-degree oven, bake the tartlets for 20 to 25 minutes or until the piecrust is golden brown.
  5. Remove the tartlets from the oven and allow to cool slightly, then top with 1 teaspoon of sour cream immediately prior to serving.
