Mexican Grilled Corn

Who doesn't love corn on the cob? And who wouldn't love this Mexican grilled corn that's loaded with flavor and fun to eat?


Select ingredients:


  1. In a small bowl, combine the mayonnaise, paprika, chili powder, garlic powder, and 1/2 cup of the feta cheese. Refrigerate until needed.
  2. Grill the corn for 10 to 12 minutes on an outdoor grill, rotating every few minutes. Or, to cook indoors, boil the corn for 5 to 6 minutes, then place on a plate to dry/drain. Transfer the corn to an oiled grill pan on the stove. Grill them an additional 4 to 5 minutes, rotating frequently, until slightly browned all the way around.
  3. In a small saucepan, melt the butter, then spoon the melted butter over the grilled corn.
  4. Spread the mayonnaise/feta mixture over the grilled corn.
  5. Sprinkle the remaining feta cheese over the corn, top with the extra chili powder if desired.
  6. Squeeze a wedge of lime over the corn and enjoy!
