Savory, slightly spicy and oh-so tasty, this Mexican Rice Bowl with Jicama Salsa recipe is a filling vegetarian dish that’s perfect for lunch or dinner. Not familiar with jicama? This starchy root vegetable is also referred to as a Mexican turnip and is crisp, refreshing and earthy in flavor, making it a delicious ingredient for a salsa, just like in this rice bowl meal.


Select ingredients:


  1. Combine jicama, jalapeno, red onion, cilantro, lime juice, honey and salt in a medium bowl. Toss to combine and let sit for at least 30 minutes.
  2. Cook Mexican rice according to package directions.
  3. Divide rice between bowls. Top with jicama salsa, black beans, corn, avocado and tortilla strips. Garnish with lime wedges and cilantro.

    Recipe Tip: Make this a heartier meal by adding grilled chicken, steak or shrimp.
