Savory, slightly spicy and oh-so tasty, this Mexican Rice Bowl with Jicama Salsa recipe is a filling vegetarian dish that’s perfect for lunch or dinner. Not familiar with jicama? This starchy root vegetable is also referred to as a Mexican turnip and is crisp, refreshing and earthy in flavor, making it a delicious ingredient for a salsa, just like in this rice bowl meal.

- Combine jicama, jalapeno, red onion, cilantro, lime juice, honey and salt in a medium bowl. Toss to combine and let sit for at least 30 minutes.
- Cook Mexican rice according to package directions.

Divide rice between bowls. Top with jicama salsa, black beans, corn, avocado and tortilla strips. Garnish with lime wedges and cilantro.
