Mimosas are the perfect drink to enjoy with Sunday brunch, but our Mimosa Popsicles are a tasty and new way to enjoy these citrusy drinks. Made with orange juice, your favorite sparkling white wine and a fresh orange, plus a popsicle mold, you can also choose to use an ice cube tray and popsicle sticks or wooden skewers to freeze up these refreshing treats. And to add even more fruit flavor, skip a half cup of the orange juice and use pineapple juice instead. You can also freeze some pineapple tidbits along with the slice of orange as well.
- Cut the orange into 1-inch slices, then cut in half lengthwise. Place one slice into each ice-pop mold.
- Mix together the orange juice and prosecco and pour into molds.
- Freeze for 4-8 hours. If the popsicles are difficult to remove, run the molds under warm water for no more than 20 seconds.
Serve upside-down in a glass of prosecco for an extra-cold drink.
Recipe Tip: If using an ice cube tray and popsicle sticks, make sure to cut the orange slices into halves or thirds, depending on the size of the tray sections.
