- Preheat the oven to 375°F. Heat a large oven-safe skillet over medium heat. Add the barbecue sauce and cream cheese and simmer, stirring frequently until combined, about 5 minutes. Remove from the heat and stir in 1 cup of the cheddar until smooth. Top with the meatballs and remaining cheddar.
- Bake until light golden brown and the meatballs are fully heated through, about 15-20 minutes.
- Garnish with the onion and cilantro. Serve with the tortilla chips and enjoy.
Substitute: Substitute teriyaki sauce, salsa verde or sweet chili sauce for the barbecue sauce!
