- Adjust oven rack to middle position and preheat to 375 degrees. Melt butter in a saute pan, then add sweet potato and onion. Cook until sweet potato is beginning to soften, about 7 minutes. Remove from heat and allow to cool.
- Grease a muffin tin, then whisk together beaten eggs and sweet potato and season to taste with salt and pepper. Divide mixture between muffin tin and bake until eggs are puffed and set, about 15 minutes. Serve with salsa.
