Super-fresh and healthy, these mini tacos are packed with veggies and chicken, making for a perfect bite-size snack or party appetizer.

In a bowl, mix together the sour cream and taco seasoning. Refrigerate for one hour.

Cut the tortillas into quarters.

Place two tortilla quarters into each cup of a lightly oiled muffin tin.

Sprinkle Cheddar cheese (about 1 tablespoon) in the bottom of each cup.

Add the shredded chicken.

Add the tomatoes and peppers.

Add more cheese.

Bake in a 375-degree oven for 15 to 20 minutes, until the tortillas are getting crispy.

Remove the cups from the oven and top with your favorites: fresh lettuce, a dollop of the taco seasoning mixture, a few more tomatoes, and a little bit of extra cheese.
