Looking for an easy and low-cost option for happy hour? Give these grown-up treats a try! They boast a mojito cocktail’s zesty, herbal flavors in an extra-refreshing frozen form. If you’re not a fan of rum, substitute vodka for a spiked limeade popsicle, or tequila for a margarita popsicle!

- Combine the sugar and water, then mix in a small saucepan over medium heat. Bring to a boil and cook just until the sugar is dissolved. Remove from the heat, stir in the mint and set aside to cool for 15 minutes.
- Strain the simple syrup through a fine-mesh strainer into a pitcher. Add the lime juice and rum and mix to combine.
- Place a slice of lime into each section of the popsicle mold. Pour in the mojito mixture and freeze for at least 6-8 hours. To easily remove the popsicles, run the molds under warm (but not hot) water for no more than 30 seconds.
Recipe Tip: Flavored simple syrup can be made up to 2 weeks in advance and stored in the refrigerator."
