Looking for an easy and low-cost option for happy hour? Give these grown-up treats a try! They boast a mojito cocktail’s zesty, herbal flavors in an extra-refreshing frozen form. If you’re not a fan of rum, substitute vodka for a spiked limeade popsicle, or tequila for a margarita popsicle!

  1. Combine the sugar and water, then mix in a small saucepan over medium heat. Bring to a boil and cook just until the sugar is dissolved. Remove from the heat, stir in the mint and set aside to cool for 15 minutes.
  2. Strain the simple syrup through a fine-mesh strainer into a pitcher. Add the lime juice and rum and mix to combine.
  3. Place a slice of lime into each section of the popsicle mold. Pour in the mojito mixture and freeze for at least 6-8 hours. To easily remove the popsicles, run the molds under warm (but not hot) water for no more than 30 seconds.

Recipe Tip: Flavored simple syrup can be made up to 2 weeks in advance and stored in the refrigerator."
