Moroccan Carrot Spread

Vibrant and colorful, this creamy spread relies on fresh carrots cooked until very tender. The spread will keep for up to 3 days in a covered container in the refrigerator. Bring to room temperature for serving with pita bread rounds cut into wedges.

- Put the carrots in a medium microwave-proof dish; add about 1/4 cup water. Cover and microwave on HIGH for about 5 minutes or until very tender. (Or cook the carrots in a stovetop steamer.) Drain well and rinse with cool water.
- Process the carrots in a food processor until mashed. Add the remaining ingredients, except the parsley garnish. Process until smooth and creamy. Taste and adjust the seasoning.
- Serve in a bowl garnished with parsley.
