Craving something sweet, but trying to skip the sugar? These Carrot Cake Bars are made with no added sugars and feature maple syrup instead to sweeten these scrumptious treats. So, if you love carrot cake and cream cheese frosting, give this sweet snack a try! Once made, you can store your bars in an airtight container for up to 5 days.
- Preheat the oven to 350°F and line an 8x8” baking dish with parchment paper (cut a line down each corner to the bottom of the pan for a snug fit). In a large bowl, whisk together the oats, cinnamon, nutmeg, salt and baking powder.
- In a medium bowl, whisk together the maple syrup, egg, peanut butter and vanilla extract. Add mixture to dry ingredients and stir until combined. Gently fold in shredded carrots. Bake for 45 minutes.
- While allowing the cake to cool, whisk together all the ingredients for the drizzle. Remove the full cake from the pan easily by lifting the parchment paper and moving the cake to a wire cooling rack. When ready to serve, slice into evenly sized bars and drizzle with icing.
