  1. Melt one tablespoon of butter in a large saucepan over medium heat. Add chopped white onion, and cook for 6-7 minutes until very soft and fragrant. Add minced garlic, and cook for about a minute until also soft and fragrant. Add refried black beans, cumin, and hot sauce. Stir to combine, then turn off the heat and set aside.
  2. In a large bowl, whisk eggs and milk together until well blended. Add shredded cheese, whisk to combine, then set aside.
  3. In a large skillet, melt two tablespoons of butter over medium heat. Add chopped red pepper, and cook until soft and fragrant, about 6-7 minutes.
  4. Pour eggs into the skillet with the red pepper, and cook until scrambled. Turn off the heat.
  5. Lay the tortillas out on a flat surface. Spoon the refried black bean mixture down the middle of each tortilla, then top the black bean mixture with cheesy scrambled eggs and toppings of your choice. Roll the tortillas up to form burritos, and serve immediately!
