No-Bake Chewy Granola Bars

These no-bake granola bars are easy, fun, and delicious and an excellent snack for an on-the-go child.

  1. In a bowl, combine the granola cereal, the rice cereal, the raisins, and the salt. Set aside.
  2. In a medium saucepan, combine the butter, brown sugar, honey, vanilla, and peanut butter.
  3. Cook over medium heat until the sugar dissolves and the ingredients combine (about 3 to 4 minutes). Stir frequently.
  4. Pour the warm sugar mixture into the bowl with the cereal mixture.
  5. Stir to combine all ingredients thoroughly.
  6. Quickly press the mixture into an ungreased 9x9 baking pan (but be careful because the mixture may be hot).
  7. Sprinkle the chocolate chips over the top and press them into the granola mixture.
  8. Pop the pan in the refrigerator for approximately 15 minutes until cool, then cut into bars and serve.
