Celebrate the warm, beautiful days of springtime with a sweet treat featuring one of the beloved fresh fruits of the season – berries! This creamy chocolate pie has a chocolate cookie crust and is topped with three different berries – strawberries, blueberries and raspberries. And when you’re ready to give this pie a try, make sure to plan ahead because it needs to set for at least four hours before you can dig in.
- Place chocolate chips in a large, heat-proof bowl and set aside. Heat cream, butter and kosher salt in a small saucepan over medium heat until simmering. Pour hot cream mixture over chocolate chips and let sit for 1 minute. Gently stir with a rubber spatula until chocolate has completely melted and is smooth and glossy. Pour chocolate mixture into crust and chill until set, at least 4 hours or up to overnight
- Top chilled pie with strawberries, blueberries and raspberries. Serve with whipped cream and garnish with fresh mint.
