Strain liquid from black beans and discard it. Lightly mash beans. Mix beans and remaining ingredients and form into patties.
- Heat oil in hot pan or griddle. Saute the patties on high heat until patties form a crust. Flip and repeat on reverse side. Reduce to medium-low heat and cook until done, about 5 minutes. Serve on a bed of fresh spinach and top with aioli and a tomato.
- To make the aioli, peel one clove of garlic and microwave it with a pinch of salt for about 15 seconds. Combine 1 cup Hellmann's mayonnaise with 1 tablespoon chopped fresh chives and 1 tablespoon rich tasting extra virgin olive oil. Mix the chives, mayo, salt and softened garlic until creamy. Remove and discard garlic. Garnish the black bean burger with the aioli and top it with the tomato. Serve immediately to keep the aioli from separating.
