- Preheat the oven to 375 degrees. Combine oats, walnuts, coconut, cinnamon, nutmeg, baking powder and salt in a bowl and stir together.
- In a separate bowl, add the flax eggs (2 tablespoons flax meal with 6 tablespoons water), milk, syrup, coconut oil and vanilla and whisk together. Add the dry ingredients to the wet, adding Â¾ of the blueberries, and stir with a spoon or spatula until combined and all ingredients are soaked.
- Pour the contents of the mixing bowl into a well-greased 9x9 pan or similar sized casserole dish and spread out the mixture evenly. Then scatter the remaining blueberries and the slivered almonds on top and bake for 40 minutes. Allow to cool for a few minutes after baking is complete, then serve with a drizzle of maple syrup, a few spoonfuls of coconut yogurt, or your favorite buttery spread.
