These adorable mini quiches are perfect for a quick breakfast, brunch or light lunch! Honey ham, cheddar and spinach are a classic combination, and using Food Lion refrigerated pie crusts makes prep a breeze. Simply cut rounds from the dough, place them in a muffin tin, fill with the eggy mixture and voila! You’ve got tasty little bites ready to go in just 45 minutes.

  1. Preheat the oven to 375°F and grease a 12-cup muffin tin with nonstick cooking spray. Place the spinach in a clean kitchen towel and squeeze out any excess moisture. Set aside.
  2. Whisk the cheese, ham, milk, eggs, salt and pepper together in a large bowl until combined.
  3. Cut out three 4-inch circles from each pie crust (making a total of 12 circles). Firmly press each circle in the bottom and up the sides of the muffin tin. Fill each muffin tin evenly with the egg mixture.
  4. Bake until the pie crust is golden brown and the egg mixture is set, about 25 to 30 minutes. Serve warm and enjoy.

Recipe Tip: Keep the quiches refrigerated or freeze until ready to eat! Serve cold or reheat in the oven at 350°F for 10 to 15 minutes until fully heated through.
