These adorable mini quiches are perfect for a quick breakfast, brunch or light lunch! Honey ham, cheddar and spinach are a classic combination, and using Food Lion refrigerated pie crusts makes prep a breeze. Simply cut rounds from the dough, place them in a muffin tin, fill with the eggy mixture and voila! You’ve got tasty little bites ready to go in just 45 minutes.
Ingredients
Directions
- Preheat the oven to 375°F and grease a 12-cup muffin tin with nonstick cooking spray. Place the spinach in a clean kitchen towel and squeeze out any excess moisture. Set aside.
- Whisk the cheese, ham, milk, eggs, salt and pepper together in a large bowl until combined.
- Cut out three 4-inch circles from each pie crust (making a total of 12 circles). Firmly press each circle in the bottom and up the sides of the muffin tin. Fill each muffin tin evenly with the egg mixture.
- Bake until the pie crust is golden brown and the egg mixture is set, about 25 to 30 minutes. Serve warm and enjoy.
Recipe Tip: Keep the quiches refrigerated or freeze until ready to eat! Serve cold or reheat in the oven at 350°F for 10 to 15 minutes until fully heated through.
