Easy to make and oh-so tasty, this Braised Chicken and Tomatoes recipe is cooked in a single pot in the oven where it slowly bakes with Italian flavors, giving you a flavor-packed and juicy entrée. Plus, since it’s made with red wine, it pairs deliciously with a glass of your favorite variety. And that makes this dish perfect for a romantic Valentine’s Day meal, anniversary or any other special occasion.
Ingredients
Directions
- Preheat oven to 400°F. Add olive oil to a heavy-bottomed pot over medium heat. Pat chicken thighs dry and season with salt and pepper. Add chicken skin-side-down, and brown, about 3-4 minutes. Turn over and repeat.
- Transfer chicken to a plate and set aside. Add garlic and onions and cook for 7-10 minutes, or until softened. Return chicken and any accumulated juices back to the pot.
- Meanwhile add drained tomatoes, wine, brown sugar, vinegar and Italian seasoning to a blender. Pulse until combined but still chunky.
- Pour mixture over chicken and bring to a boil. Cover and transfer to oven for 45 minutes, or until chicken is cooked through, reaching an internal temperature of 170°F at the thickest part.
