For an easy school night meal that goes from prep to presentation in under 30 minutes, give these quick, one pot peanut noodles a try. Full of veggies and brimming with flavor, don’t be surprised if the whole family asks for seconds.
- In a pot, heat oil over medium heat. Add onions, bell pepper and broccoli and cook, stirring occasionally, for five minutes or until edges begin to brown. Add in the carrot, boiling water and noodles. Simmer for 7-8 minutes or until the noodles are just soft.
- Transfer the contents of the pot to a strainer, rinse the noodles and vegeatbale with water so they don’t stick together, and return the pot to the stove over medium heat. Add the milk, soy sauce or tamari, peanut butter, onion powder, garlic, sriracha, and ginger and whisk to combine. Heat the sauce, stirring constantly, for 2-3 minutes. If the sauce is too thin, cook for another minute or two.
- Dump the noodles and vegetables back in the pot with the sauce and remove from heat. Stir or toss to combine. When noodles are coated, transfer to serving bowls, top with chopped cilantro, and serve immediately.
