Ham is an Easter staple and this dish makes your ham dinner quick and easy to cook for your family for the holiday (or any time throughout the year). And this green pea pesto gnocchi recipe also includes your fresh vegetables and a starch, so your whole meal can be served from one skillet. It’s a simple recipe that tastes delicious, but only takes 35 minutes to put together. Talk about a winning Easter dish!

Make green pea pesto by pulsing the peas, garlic, lemon juice, basil, and salt in a blender until finely chopped. Open the blender lid and, while blending on high, add olive oil in a very slow stream until creamy and thick.
- In an oven-safe pan or cast-iron skillet, melt the butter over medium heat. Add the garlic, onions and salt. Cook until fragrant, about 5 minutes. Add the ham and the mushrooms and cook, stirring frequently, until liquid is evaporated, 8 to 10 minutes.

Pour in the chicken broth and scrape the bottom of the pan to remove any brown bits. Add gnocchi and thyme. Simmer for 7 to 8 minutes, until gnocchi is soft. Turn on the oven broiler.

Gently fold in green pea pesto and feta with a rubber spatula, then transfer the skillet to the oven and allow to brown for no more than 3 minutes, checking frequently. Serve immediately.
