Ooey Gooey Leftover Turkey Reuben

If ever there was a Reuben that commanded a standing ovation, it's this one. With cheese, spicy mustard, homemade Russian dressing and cheese running down the crispy crust, better make second helpings. Rye bread is such a unique flavor that not everyone likes, so this sandwich is prepared on regular multi-grain bread rather than rye. There are a few steps to get to this level of such ooey gooey goodness, but well worth the effort to bite into something this flavorful.



  1. Set oven to broil. Toast one side of the bread. Remove and butter other side and toast until golden brown. Set aside, buttered side down on a cookie sheet layered with tin foil.
  2. Mix mayo, pickles and ketchup to make the dressing and set aside. In a pan, saute turkey and sauerkraut together until warm. Spread dressing on one side and layer cheese and warm turkey / sauerkraut mixture. Spread mustard on other slice of toasted bread and add second slice of cheese.
  3. Broil all sandwiches open faced until cheese is slightly melted. Remove from heat, assemble and enjoy!
