The addition of a touch of orange goes wonderfully with maple syrup but why not take advantage of the healthy benefits you get from both honey, and blackberries, when the combination is this delicious.
Whisk together the egg, milk and oil just until mixed.
- Mix in the honey and orange zest.
Add the dry ingredients and mix but do not over beat. It’s okay if there are some lumps.
- Heat a small amount of oil in a large fry pan, over medium heat.
Drop ¼ cup amounts of pancake batter into the pan. You will get two or three in at a time. Flip when you see circles on the surface and the underside is golden. (Only flip once or your pancakes will be tough.) Cook the other side and continue until you have used all of your batter.
- Heat the blackberries over low heat. Add a little water if they are sticking to the pan.
- With the lid on, let the berries break down for a couple of minutes and then add to the honey and cinnamon, and mix well.
Pour blueberry honey mixture over pancakes and serve!
