- Stir together frosting and food coloring until well combined. Scoop the mixture into a pastry bag fitted with small open star tip.
- Pipe frosting into small rosettes around edges of cookies to resemble sunflower petals, working from outer edges of cookies to centers. Add more rosettes until tops of cookies are completely covered (roughly 10 per cookie).
- Place blueberries in the center of the cookie and a mint leaf next to each one to resemble a stem.
