Organic Carrot Salad

This simple and super easy raw salad is packed full of flavor. It only takes a few minutes and a food processor and you have a delightful and Asian-inspired side dish.

  1. Using the grater attachment of your food processor to shred the carrots then transfer them to a serving bowl. Next, toast the sesame seeds in a dry pan over medium-high heat until they are golden, just a couple minutes.
  2. In a small bowl, combine the sesame oil, garlic, sugar, vinegar, red pepper and salt and whisk to combine. Pour over the carrots, then add the sesame seeds and cilantro and toss to combine. Serve chilled or at room temperature.
