Oven Fried Salmon Cakes

A lighter take on salmon cakes - baked, but still crispy and delicious. .

- In a large bowl, whisk the eggs. Then add the salmon, crushed crackers, mayonnaise, mustard, onion powder, garlic powder, paprika, salt and pepper. Mix together well.
- Preheat the oven to 400 degrees F.
- Divide the mixture evenly, into 5 or 6 rounds. Place them onto a parchment lined half sheet pan. Gently press them down to flatten until they are about 3/4-inch thick or so. Drizzle lightly with a little olive oil.
- Cook in the oven for about 25 minutes, or until they are nicely golden brown. Serve warm with tartar sauce.
