A great healthy dish you can make in the morning and bake when you get home.
- 1. Adjust oven rack to middle position and preheat to 425 degrees. Tear 4, 10 inch length of tin foil and place them in a row in front of you. Place 1 tilapia filet on each piece of foil.
2. In a bowl toss cherry tomatoes, oregano, green olives, and 1 tablespoon olive oil together and season to taste with salt and pepper. Place 1/4 tomato mixture on each filet, then drizzle with remaining olive oil. Seal each filet in foil and place each packet on a baking sheet. Cook for 25 minutes then remove from foil and serve.
