Herb de Provence roasted tomatoes and parsnips
- Pre heat oven to 400 degrees
- Spread olive oil on baking pan evenly.
- Cut parsnips, carrots, tomatoes into chunks. Lay on baking pan
- Sprinkle salt and herb de Provence onto veggies.
- Cook 30 to 40 min until carrots and parsnips are tender.
- Let cool and enjoy.
