Herb de Provence roasted tomatoes and parsnips

  1. Pre heat oven to 400 degrees
  2. Spread olive oil on baking pan evenly.
  3. Cut parsnips, carrots, tomatoes into chunks. Lay on baking pan
  4. Sprinkle salt and herb de Provence onto veggies.
  5. Cook 30 to 40 min until carrots and parsnips are tender.
  6. Let cool and enjoy.
