Paleo Carrot Mug Cake

When you only want one serving of sweetness but don’t want to ruin your whole diet, try this tasty paleo carrot mug cake. It comes together in a flash and is gluten-free and vegan, too.


Select ingredients:


  1. In a mug, add the coconut flour, baking soda, cinnamon, ginger and salt and stir to combine.
  2. In a separate bowl or mug, add the flax meal, water, coconut oil, vanilla, syrup, carrots, almond milk, and walnuts and stir to combine.
  3. Pour the wet ingredients into the mug with the dry and stir until ingredients are combined and a crumbly batter forms. If the batter is too dry, add more milk 1 tablespoon at a time.
  4. Place in the microwave and cook for three minutes. Allow to cool slightly, then top with whipped coconut cream and serve warm.
