When you only want one serving of sweetness but donât want to ruin your whole diet, try this tasty paleo carrot mug cake. It comes together in a flash and is gluten-free and vegan, too.
- In a mug, add the coconut flour, baking soda, cinnamon, ginger and salt and stir to combine.
- In a separate bowl or mug, add the flax meal, water, coconut oil, vanilla, syrup, carrots, almond milk, and walnuts and stir to combine.
- Pour the wet ingredients into the mug with the dry and stir until ingredients are combined and a crumbly batter forms. If the batter is too dry, add more milk 1 tablespoon at a time.
- Place in the microwave and cook for three minutes. Allow to cool slightly, then top with whipped coconut cream and serve warm.
