Select ingredients:


  1. 1. Adjust oven rack to middle position and preheat to 425 degrees. Toss carrots with coconut oil then place on a foil lined baking sheet. Cook for 20 minutes, or until carrots have begun to brown.
  2. 2. Mix together maple syrup, ginger and salt to taste then remove carrots from the oven and toss in maple mixture. Place back in the oven and cook for another 10 minutes.
