Paleo sweet potato and sausage breakfast bake

A great paleo friendly way to feed a crowd.

  1. 1. Adjust oven rack to middle position and preheat to 425 degrees. Place sweet potato in an 8, by 8 inch baking pan then toss with coconut oil. Crumble sausage on top of sweet potato and back for 20 minutes, tossing after 10 minutes.
  2. 2. Remove from the oven and allow to cool. Season beaten eggs with salt and red pepper flakes then pour over sausage mixture. Place back in the oven and bake until eggs are set, about 25 minutes. Allow to cool slightly then serve.
