This quick and easy recipe is great for leftover deli turkey.
- Prepare the bruschetta by combining the tomatoes, basil, garlic, and balsamic vinegar. Add salt and pepper to taste. Set aside.
- Heat a grill pan over medium heat. Brush one side of the tortilla with butter and place buttered side down in grill pan.
- Line one side of tortilla with 2 slices of mozzarella cheese. Place two slices of folded turkey on top of the cheese.
- Place 1/4 cup of bruschetta mixture on top of the turkey and then place two more slices of cheese on top of the bruschetta. Allow the cheese to start melting and then fold the tortilla in half. Serve hot.
