Simple and easy-to-make dinner that's light and healthy!
- In a microwave-safe bowl, combine bread crumbs, parmesan and butter. Microwave for 20 seconds and stir well. Set aside.
- In a separate small bowl, mix oregano, garlic, salt and pepper. Preheat oven to 400 degrees.
- In an oven-safe saute pan, warm olive oil. Add salmon. Sprinkle spice mixture on each side. Cook each side about 8 minutes on medium low heat, or until salmon is cooked through. (Will depend on the thickness of your filet).
- Squeeze lemon juice over salmon filet and coat the top with the bread crumb and parmesan mixture. Bake for about 5-8 minutes. Serve immediately.
