Warm, sliced juicy peaches with a buttery crisp oat top is baked to perfection for a summer treat for the two of you! Double the recipe for additional servings.
In an 8-inch cast iron skillet over medium heat, add 4 tablespoons of butter and the white sugar, stirring constantly until the mixture is melted and amber-colored (about 3 to 4 minutes).
Momentarily remove the skillet from the heat, and layer the peaches (a circular pattern works well) on top of the butter and sugar mixture. Return to medium heat and let it cook for approximately 8 to 10 minutes (watch carefully to avoid burning). Do not stir during this portion of the cooking process. Remove from heat.
In a small mixing bowl, combine the oats, the brown sugar, the flour, and cut in the remaining 4 tablespoons of butter. Combine thoroughly.
- Place the topping over the fruit, then place the skillet in a pre-heated 375-degree oven. Bake for approximately 15 minutes.
- Serve warm.
