- In a Dutch oven, sauté the red and yellow peppers, the corn, and the yellow onion until soft, then add the chili powder, cumin, cayenne pepper, garlic powder, onion powder, salt, black pepper, and oregano, sautéing for an additional minute or so.
- Add the beans, the tomatoes, and the broth, then bring to boil and reduce to simmer.
- Cook for 30 minutes, then stir in the peaches and the red onion and cook for an additional 5 minutes.
- If desired, garnish with sour cream and cheddar cheese, or your choice of garnishes.
