Pecan Cranberry Quinoa

This savory quinoa is full of flavor with a hint of sweet from raw agave nectar! It's delicious and take less than 30 mintues to make!

  1. Heat coconut oil in saucepan. Sauté garlic until it softens. Add quinoa and stir until toasted.
  2. Add water and bring to boil. Simmer for 15 minutes.
  3. Fluff quinoa with fork, and stir in pecans, red pepper, cranberries, scallions, 1/2 cup cilantro, and salt.
  4. Add water and bring to boil. Simmer for 15 minutes.
  5. Toss quinoa with dressing to coat evenly. Garnish with lime wedge and cilantro if desired.
