Pecan Cranberry Quinoa

This savory quinoa is full of flavor with a hint of sweet from raw agave nectar! It's delicious and take less than 30 mintues to make!
Ingredients
Directions
- Heat coconut oil in saucepan. Sauté garlic until it softens. Add quinoa and stir until toasted.
- Add water and bring to boil. Simmer for 15 minutes.
- Fluff quinoa with fork, and stir in pecans, red pepper, cranberries, scallions, 1/2 cup cilantro, and salt.
- Add water and bring to boil. Simmer for 15 minutes.
- Toss quinoa with dressing to coat evenly. Garnish with lime wedge and cilantro if desired.
