Pecan Crusted Salmon and Cheesy Grits

A pecan crusted salmon, sitting on a bed of cheesy grits. What's not to love?
Ingredients

- Preheat oven to 400 degrees F.
- Combine pecans, breadcrumbs, and parsley in a bowl. Season each salmon filet with salt and pepper and dredge in pecan mixture.
- Spritz top of each filet with cooking spray.
- Place in oven and bake until fish flakes easily with a fork, about 10-12 minutes.
- Bring 4 cups of salted water to a boil. Slowly whisk in grits. Reduce heat and simmer for 5 minutes. Remove from heat and add butter, cheddar cheese and nutmeg and stir until well combined. Cover and set aside.
- Combine honey, garlic, lemon juice, and cornstarch in a small sauce-pot over medium heat. Bring to a boil; reduce heat and simmer until slightly thickened, about 3-4 minutes.
- Serve salmon over grits and drizzle with a touch of the honey glaze.
