A pecan crusted salmon, sitting on a bed of cheesy grits. What's not to love?

  1. Preheat oven to 400 degrees F.
  2. Combine pecans, breadcrumbs, and parsley in a bowl. Season each salmon filet with salt and pepper and dredge in pecan mixture.
  3. Spritz top of each filet with cooking spray.
  4. Place in oven and bake until fish flakes easily with a fork, about 10-12 minutes.
  5. Bring 4 cups of salted water to a boil. Slowly whisk in grits. Reduce heat and simmer for 5 minutes. Remove from heat and add butter, cheddar cheese and nutmeg and stir until well combined. Cover and set aside.
  6. Combine honey, garlic, lemon juice, and cornstarch in a small sauce-pot over medium heat. Bring to a boil; reduce heat and simmer until slightly thickened, about 3-4 minutes.
  7. Serve salmon over grits and drizzle with a touch of the honey glaze.
