Pecan Pie Cookies

A miniature version of a pecan pie, perfect for a holiday potluck.



  1. Adjust oven rack to middle position and preheat to 350 degrees. In a bowl cream 1 cup brown sugar and 3/4 cup soft butter together. Add beaten egg and mix until thoroughly combines. In a separate bowl mix together flour, baking powder, and salt. Then add to butter mixture and mix until a dough forms.
  2. Mix pecans, brown sugar, and melted butter together.
  3. Divide dough into 32 evenly sized balls and place on a cookie sheet lined with parchment paper, then make an indent in the center of each ball. Divide the pecan mixture between each cookie, then bake until each cookie is golden brown. About 10-14 minutes.
