There’s nothing quite like eating some delicious pecan pie during the holidays. This dessert recipe is a nod to this Thanksgiving and Christmas favorite, but in cookie form. That means it’s easy to get the kiddos involved and make this dessert together. And that’s what the holidays are all about – family time! To make this Pecan Pie Cookie recipe even easier, use premade sugar cookie dough instead. It’ll change the flavor slightly but will save a little prep time. That way, you and your family can enjoy these cookies even sooner.
- Preheat oven to 350°F and cover a baking sheet with parchment paper. With a hand mixer, cream together the butter and sugar. Add egg and vanilla and beat until combined. In a separate bowl, whisk together the baking powder and flour. Fold in your wet ingredients and mix until smooth, then set aside.
- In a medium bowl, make pecan pie filling by combining the ingredients. Shape cookie dough into 1-inch balls and place at least 2 inches apart on baking sheet. Make an indentation on each with your thumb, then fill each cookie with 1 tablespoon of filling.
- Bake for 8-10 minutes, or until cookie rims are golden-brown. Allow to cool completely before storing in an airtight container for up to 4 days.
