- Preheat oven to 400 degrees. Mix a pesto packet with 2 T olive oil.
- Cut up: tomatoes (I used 4 romas), chicken (bite size), fresh spinach.
- Put everything in a 9 x 13 baking dish including pesto sauce, garlic, squeeze of lemon and mix together.
- Bake until chicken is done (25 minutes). Sprinkle with shredded Italian cheese. Spoon into warm pitas.
